I have only heard about “meat pies” from my friend in Africa. He loves them. I was curious as to what they are, I was thinking is it like the chicken pot pies that my mom would make or were sold in the frozen section at the grocery store. Not only chicken pot pie made in a pie pan, but they are so many different types of them. I learned about them in a cookbook called Meat Pies written by Brian Polcyn and Michael Ruhlman. I appreciated the fact they have a gluten free dough recipe. I have several people in my life who cannot eat gluten. The details in this book, actually taken pictures of the chefs hands as he creates the dough for the meat pie helped guides the cook along on their adventure. A big plus is there are pictures of the process, that helps a lot. I learn from reading and looking at pictures and seeing it done.
I am keeping this book as a reference and cooking from it when I make dough for meat pie.
