God has been talking to me about my eating habits and how it is affecting my body. A few years ago I felt a small voice tell me that I needed to follow the anti-inflammation diet or eat the Mediterranean way. I even looked it up on the internet and found a lot of resources. Living with a trach and tracheal stenosis and the hundreds of throat surgeries I have had since that time in order to keep me breathing it felt too much. It was overwhelming to me. It seemed simpler to just get food that was convenient and I didn’t have to think about preparing. On rare occasions I would make soup or stew or something in the real food category.

Reading Dr. Don Colbert’s book “Let Food Be Your Medicine”, I’m encouraged to try eating this way. I have a helper now and she can help me cook up my meals.

Here are 5 things I learned while reading:

  • Inflammation is the root cause of most chronic conditions. And that means we should battle the inflammation instead of masking the symptoms and pain.
  • Chewing your food 30 times before you swallow is the best for food digestion and food absorption. Those who suffer from hiatal hernia or any other heart burn type of issues will benefit from this.
  • 70 to 90 percent of processed food that we find at the grocery store contain GMO Ingredients.
  • We crave the foods that are actually making us sick. I find this tidbit interesting, because I know people who crave chicken or grits, and I am having a hard time seeing how this makes them sick.
  • A.T: Hormones, Attitude, and Timing. This helps keep us on our wellness journey. Our wellness journey is mental and emotional too and not just doing. Hormones: Leptin and Ghrelin which tells you when you are hungry or full. And sometimes they get out of whack. Attitude: Self-talk. Saying to yourself. I can’t do anything. I’m too fat. I’ve always been fat defeats your goals, change how you talk to yourself and your attitude. Timing: eat the heaviest meal at breakfast time and eat the smallest meal at dinner time. This helps your body. Our hormones slow down and our gut slows down at night and we don’t process our food. But if we eat our heaviest meal at breakfast we absorb and process it better and it gives us the fuel we need for our day.
