The last 56 days I have been reading a devotional “Devotions for a Healthier You” by Katie Farrell. In this devotional Farrell has recipes, so I decided I was going to try one. I tried the Greek Crockpot Chicken. I changed the recipe up a bit. Made it my own by adding different vegetables to the mix. Since I cannot do tomatoes. I love them, but they do not love me. I also didn’t use honey in the recipe either. I love my crockpot. So a chance to make several meals in one is appealing to me. I have to say that I enjoyed this recipe a lot. Here is what I did…
Greek Crockpot Chicken:
1 extra-large (enough for 3 people) chicken breast
1 carton of Pacific Pride Low Sodium chicken broth
4 carrots chopped
½ onion chopped
5 gloves of garlic diced
2 parsnips chopped
3 tbs of oregano
1 lemon juice and zest
I chopped all the vegetables up and put them in the crockpot. Then I placed the chicken breast inside. Then I added the chicken broth, lemon juice, garlic, and oregano and mixed it all up. Then I cooked it for 6 hours. I added a dab of Greek yogurt when I dished it up. Yum!
The recipe in the book was this:
4 cup chicken broth
2 tbs lemon juice
1 tbs honey
1 tbs dried oregano
1 tbs minced garlic
½ tbs onion powder
½ red onion
1 can of diced tomatoes
1 pound boneless chicken breast.
You can see that I added more vegetables and used more broth and garlic and skipped out on the tomatoes and honey.
