When I went to Gateway Produce here in Vancouver Washington I saw spaghetti squash for a great price. They were .49 a pound, so I bought two. I am sure you, like me have heard that spaghetti squash is a good replacement for pasta. I have not tried it until now. I have to agree with the census. Here is what I did to make a yummy meal with spaghetti squash.
I took both of my squash and tried to cut them in half. Yes, I said try. Let me tell you it is a workout. They are so hard and so I had to really push down on the knife just to make it go through the skin. If you need the help you can ask a body builder or a weight lifter to come and cut your squash. Thankfully I didn’t have to do that. After they are cut in half and you deseed them I placed them into a roasting pan with the skin up. It took 30 minutes for it to roast, but some ovens may take longer. After it is done roasting let it cool and then dig out the strings. I freeze what I wasn’t going to use.
The spaghetti sauce I used a can of petite diced tomatoes. I also used 1 pound of the beef I bought from the butcher. The spices I used were fennel, rosemary, oregano, basil, garlic, and pepper. A simple sauce that is so good.
I am impressed with how good this spaghetti meal is considering that there is no pasta at all. I hope you will experiment with spaghetti squash and make yourself a yummy meal.
