Lentil Soup Day
Jamie’s Ever Changing Lentil Soup:
1 Cup of Lentils
3 to 4 carrots chopped
1 red onion chopped (or any type of onion you desire)
1 whole zucchini chopped
1 cup frozen peas
1 cup of mushrooms chopped
2 whole tomatoes chopped
1 package of Pacific Pride Organic low sodium chicken broth (or any broth you desire)
Onion powder to taste
Garlic powder to taste or use 1 whole garlic clove
Basil to taste
Oregano to taste
Sea salt to taste
I sometimes add sweet Italian turkey sausage or regular Italian sausage or even a chicken breast. This time I didn’t add any meat to it. I just wanted the vegetables and lentils. I add the vegetables that I have in fridge or freezer and it depends on my mood. That is what I love about making beans and lentils you can get creative and you do not have to follow a recipe. My lentil and beans change each time I make them. It tastes wonderful. I have not eaten my lentil soup in a long time.
It is extremely cold outside and that is saying something if I am cold.
Since I am on the quest of fueling my body to fight on I decided that today was the day to make my fabulous lentils and eat well. I made a big batch, enough to last me 6 meals. I do not mind eating the same thing two days in a row. It is simple, easy to make, even for someone with a chronic illness.
I enjoyed having my chef’s knife in my hand as I cut up my vegetables. I love that it only took 30 minutes to cook up. Lentils do not take long to cook and that is one thing I love about them. They are so full of good protein, healthy carbohydrates, and are considered a super food. I added other super food components to my concoction. Mushroom which are so good for the immune system, they help the body fight off colds and they are low in calories too. Then I added carrots which are great for the eyes. And then of course tomatoes, onions, and zucchini which are all considered a super food. I sometimes even add kale to my recipe, but I did not have any and last night I used up the last of my spinach or I would have added that too.
I know I wrote about it before, since I am jump starting my new adventure with good food and exercise which I started yesterday with doing Q-gong.
